Yet how can such ideas take root without considering viability? What is the economic landscape of Austin's local food movement? Who are the key players? What do food sector jobs look like? What about affordability? If local and sustainable food went mainstream, who benefits?

If we want to see local food proliferate for economic, health, environmental and community reasons, Austin needs to make the business of growing, distributing, preparing, serving and composting local food profitable endeavors. Business development requires investment. How do we invest in our local food system?
